Francois Barel has worked for Michelin stars restaurants in France and Tokyo and last of which was Joel Robuchon which brought him to our sunny shores of Singapore. Now all settled in Singapore with his family, Francois was also a lecturer at Nanyang Polytechnic (Diploma of Food and Beverage Management), sharing his knowledge with curious young minds on “Wines, Spirits and Mixology” before joining the Graftbar team. As the key speaker, Francois will spearhead the wine education for Graftbar, hosting regular tastings to facilitate your vino journey and bring your wine enjoyment to the next level.
With more than 10 years of experience in the hospitality industry, Hyde joins Graft8 with his enriched experience in F&B sector at major world leading hotels. With good working experience across Europe, Hyde was able to hone his communication and leadership skills through providing VIP wine services to royalty and dignitaries. Prior to joining Graft8, he was kept occupied with managing the extensive wine list of RWS Casino Crockfords Club, ensuring high quality wine service was rendered to high rollers and VIP guests at all times. Now a sommelier at Graft8, Hyde is thrilled to be working alongside his team of wine crew to enhance the wine tasting experience of our guests.
With more than 15 years of experience in the wine industry in Indonesia, Manda joins the opening team of GRAFT8 as the Sommelier Trainer to helm the wine program and curate on-premises experiences, build on corporate events and most importantly share her wealth of wine knowledge with fellow wine lovers. Having won Indonesia’s Best Sommelier Competition in 2010, Manda then proceeded to represent Indonesia in South East Asia Best Sommelier Competition in 2011 and spent several years as the Advisor (Board of Directors) of Indonesia Sommelier Association – Jakarta Chapter. An accredited sommelier awarded by the Court of Masters Sommelier (CMS) and Wine and Spirit Education Trust (WSET Level 3), Manda helms the bar and leads a team of professionals with her extensive experience, curating only the best wine selections for the discerning wine lovers.
